I must admit, I love cooking in the kitchen by myself and listening to my kids play (hopefully, but not always, quietly) in the next room. It seems like those moments of kitchen bliss only last a few minutes, and then one-by-one, my kids migrate to the kitchen and want to be part of the cooking process. This morning, with Luca and Sophie off at school, it was Annie who stopped playing dress-up in her bedroom and said, "I want to help."
Ok, bacon prep, not the most glorious, but this certainly could be fun and easy for Annie. Usually, we'll lay veggies out on a cookie sheet and drizzle them with olive oil, top with seasonings and bake. Today, however, bacon was on the menu. I showed Annie how to lay out the bacon strips. She loved the orderly process of lining them up. Personally, I love buying bacon from the deli. First, there is less packaging, but also it taste much meatier and less salty. I'll cook a bunch on a cookie sheet. Today, the bacon didn't come out in time for breakfast, but I'll save it for tomorrow morning and maybe add some bacon bits to dinner salad tonight. My husband, also, seems to find the cooked bacon pretty quickly in the fridge and will have it as a late night snack.
Cook bacon in oven for 20 minutes at 400 degrees. Check on it periodically. Pat with paper towel to remove grease.
