Yesterday, I attended October Autumn Harvest Slow Foods Cooking Class at the Mountain Park Environmental Centers in the Beulah, CO just outside of Pueblo. My friend, Sierra, teaches the class and is an amazing cook. The class focused on creative ways of using autumn produce, like peppers, squash, and pumpkin. We ended up cooking Mediterranean Red Lentils and Spinach Stew, Peppers From the Garden Soup, Squash Bread, Pumpkin and Cream Cheese Muffins, & Pesto Bread. So fun!
