Today, I left home with a mission: find mini-cassorole dishes so I'd have them ready to make warm winter dinners. I wanted to get small ones so I could freeze invidual dinners or prepare each person their own serving. Also, they keep nice and warm. With the lids, cocettes are a perfect fit for small ones who are pokey about coming to the dinner table. On the same note, they are nice for daddies that are home late from work.
After a few stops at different stores, I decided on these red mini Le Creuset from Dillards. They are pricey, but I figured you buy good quality once and then have and use them for a long time.
These little red babies were just the right fit for tonight's dinner of "Favorite Tuna Hot Dish" taken from The Great Minnesota Hot Dish cookbook by Theresa Millang. This particular cookbook I've "borrowed" from my mom and have kept it because it has the most simple, easy hot dish recipes. The recipes in this book have 7, maybe 8 ingredients. Super basic, delicious and easy. Now that I see it's on Amazon.com used for $3.95, I'm thinkign I should buy my own and give my mom her copy back.
While the mini-cocotte are great for the kids, I still make my big cassarole dish. We can't get too gourmet or refined in this household!
